Preheat the oven to 200oC/400oF/Gas mark 6 and line a large baking tray with baking paper

Two

Whilst the oven is heating, cut the broccoli head into small florets and set to one side.  Add all other ingredients for the broccoli to a mixing bowl and stir together.

Add the broccoli to the mixture and coat evenly, making sure the mixture and cheese is soaked into the floret heads

Four

Once done, empty the whole lot onto the baking tray and roast in the oven for 20 minutes, turning the florets half way through.

Whilst they are baking, add all the Pesto ingredients to a mixer and blend to the consistency you like, pouring over before serving. ….enjoy!

Spicy Roasted Broccoli 

Ingredients

Everything you'll need!

  • 1 Large broccoli

  • 110g cream cheese

  • 1 tsp black pepper

  • 1/2 tsp ground

  • cardamon

  • 1sp smoked paprika

  • 1 tsp salt

  • 1/4 grated nutmeg

  • 4 tbsp greek yogurt

  • 40g ground almonds

  • 3 tbs lemon juice

For the pesto.

  • 1 big bunch of Basil

  • leaves

  • 50g parmesan or

  • vegertarian

  • alternative.

  • 50g pinenuts

  • 1 lemon juice

  • 150ml olive oil.

  • 1/2 tsp salt

  • 1 garlic clove
